Hey Brandon If you don't have weak ankles and are looking to do mostly 1-4 days in the backcountry (or just day hikes) I'd go with low-tops. GORE-TEX is nice in cooler weather or really wet conditions, but in the summer the shoes can get pretty warm. Terrain will likely also dictate what you want. If you're in LOTS of mud, then consider ankle-height boots. In general, I think low-top day hikers are perfect - here's a bunch: http://www.gorp.com/gear-reviews/category/footwear/hiking-shoes/

The only public transport to/from Venice and the Dolomite region is via public bus, which typically runs twice daily. Or you can hire a taxis--expect to pay around $150 US, maybe less. Taking a bus is something of a pain because you have to sync your international arrival with the bus schedule--or plan some time overnight in Venice (which is never a bad idea).
