I'm peruvian and I have eaten Pachamanca many times. 1rst, it not always begin with guinea pig at all. Usually it have lamb, mutton, pork, chicken or maybe, guinea pig (but not always). 2nd. usually is made underground, in a hole in earth, it's name indicate that fact. Pacha means earth, and manca means pot.
